One-Minute Muffins. Happy Breakfast!

Your instructions: dash a teaspoon of baking powder, one of brown sugar, another of oil and one of cinnamon together with a quarter cup of flax meal. Spray a cup with cooking oil. Crack an egg into the dry mix, stir and pour into prepared cup.

Microwave one minute. (If you prepare a batch of dry mix ahead of time, all you have to do each time you want a muffin is scoop your quarter cup, then another third of your quarter cup, and stir in the egg.)

Now, please note, this is the healthy, boring version.

We recommend adding a spoonful of honey, tossing in some blueberries or perhaps sprinkling the top with crushed nuts.

(Or maybe all three. :O)
